The Ritz-Carlton, Hong Kong’s Michelin-starred Italian restaurant Tosca joins hands with luxury watchmaker Panerai to launch an exclusive dinner menu running from October 10th – November 30th, 2018.

Tosca’s Chef de Cuisine Nicola Russo was inspired by Panerai’s Florentine roots, dedication to craftsmanship and pursuit of innovation to design the exclusive menu.

The 5-course menu features a series of exquisite seafood dishes which highlight Panerai’s passion for the sea. The brand has a fascinating history with the Royal Italian Navy, it has also sponsored the restoration of the classic yacht Eilean as well as some of the world’s most prestigious regattas, including the Panerai Classic Yachts Challenge.

“The rich heritage of Panerai and its Florentine roots have inspired my creation,” says Chef Nicola. “Every dish on the menu has a story to tell.”

Chef Nicola and his team reinterpreted Panerai’s elegant design codes to create exquisite and delectable dishes with a Hong Kong touch. His culinary vision is evident in the Da Firenze A Hong Kong dish which features the Italian squid ink tordello with lobster and red prawn filling, paired with lobster sauce and the blue lobster medallion. The dish is a reminiscence of “Har Gow”- the iconic Chinese shrimp dumpling dim sum.

“The dish is my favorite because the traditional tordello is upgraded with an Asian twist as I infused typical Asian flavors such as lemongrass and soy sauce in the sauce,” he says. The dark-hued dish echoes Panerai’s Tuttonero – Luminor 1950 3 Days GMT Automatic Ceramica (Reference number PAM 1438). “Tuttonero” is Italian for “all black”.

The Siluro a Lenta Corsa dish muses the designs of Panerai’s iconic Submersible line inspired by torpedoes piloted by Italian Navy divers. Presented in a creative manner, the sea bass is cooked to perfection, served with fried oyster and “Acqua Pazza” sauce.

Whether or not you are a watch aficionado, you’ll be delighted by the dessert Il Dolce Tempo which reinterpreted Panerai’s iconic “sandwich” dial and watch gears in chocolate form. The Amedei chocolate mousse is served with a refreshing scoop of mandarin sorbet. The double layered cake with hazelnut crunch filling is inspired by Panerai’s Luminor Due series which fit in the iconic Luminor cases mechanical movements that are much lighter and slimmer.

The menu is also paired with sommelier’s choices of wines and digestives from Tuscany including the 2015 Chardonnay from Collezione de Marchi, Isole e Olena and  2010 Tenuta Friggiali of Brunello di Montalcino fame.
