Trifecta on a plate

Qantas epiQure members were treated to an unforgettable culinary feast at Emirates Wolgan Valley Resort & Spa last week, 3-5 October.

At this exclusive event Qantas epiQure members were wined and dined by internationally renowned chefs Qantas consulting chef and founder of Rockpool Neil Perry and The Ledbury’s Brett Graham, as well as Geoff Krieger, General Manager of Brokenwood Wines.

Inspired by Wolgan Valley’s food philosophy of regional, seasonal and organic produce sourced from within a 160km radius, the extravagant degustation dinner crafted by Neil Perry and Brett Graham featured a starter of yellow fin tuna tartare with Moroccan eggplant salad, harissa and cumin mayonnaise followed by Rich and Noble Spanner Crab with sweet corn congee, anise peanuts and chilli oil. For mains, guests enjoyed fillet of aged speckle park beef with celeriac baked juniper and smoked bone marrow. A delicious meringue with passionfruit curd, lemon verbena and frozen mandarin juice preceded an indulgent black forest trifle inspired by The Fat Duck. The feast was expertly matched by premium wines courtesy of Qantas epiQure, using a selection of the wines served onboard Qantas First and Business.

Other standout moments from the event included a question and answer session with Neil Perry which gave guests the opportunity to ask questions about the chef’s remarkable career. A wine tasting session and Winemaker Dinner hosted by Hunter Valley’s iconic Brokenwood Wines also took place. Highlights of the dinner included kingfish ceviche, Dutton Park duck with spiced rum jus, and mascarpone ice cream with bronze fennel, milk chocolate and mandarin, complemented by Brokenwood’s fine wines. Guests also took to the resort’s very own kitchen garden to learn about the seasonal produce used by Wolgan’s chefs, including berries, herbs and a colourful array of vegetables.

Gastronomy aside, guests enjoyed exploring the 4,000 acre carbon-neutral conservation and wildlife reserve on which Emirates Wolgan Valley Resort & Spa is set, through a range of nature-based activities such as wildlife safari tours, mountain biking and horse riding, or retreated to the resort’s Timeless Spa for an ultra-relaxing treatment.
