Truffle Season Kicks Off at the Star

The Star is celebrating the change of season with a series of intimate one-night only truffle dinners and delicious winter menus at signature restaurants Sokyo, Balla and BLACK Bar & Grill, as well as crowd favourites Pizzaperta and Fat Noodle.

BLACK Bar & Grill

One-night-only experience | Thursday 5 July

Executive Chef Dany Karam has created a tempting menu for a one-night-only evening at BLACK Bar & Grill, pairing award-winning Terra Preta organic truffles with the freshest seasonal produce and hand-selected wines.

Using truffles sourced from the Southern Highlands, the decadent experience includes a scallop and truffle sandwich, truffle-poached marron and crispy sweetbread with rosemary curd and truffle sauce. Drawing the evening to a decadent close is the roasted pineapple with Sichuan peppercorn and truffle ice cream.

“Winter allows us to showcase Australian truffles at their absolute best. We’ve used rich, winter flavours and local, cool climate wines with a savoury finish to complement the truffles,” said Karam.

The BLACK Bar & Grill six-course truffle menu is available on Thursday 5 July for $270 per person.

À la carte experience | 12 June – 9 August

BLACK Bar & Grill will also offer an à la carte or three-course winter degustation menu, including chestnut cream with truffled custard ($28) and grade-seven marbled wagyu with white polenta and sweetbread ($68). Enjoy your truffle favourites à la carte or as a three-course degustation, priced at $110 per person or $170 with matching wines.

Sokyo

One-night-only experience | Thursday 12 July

Fusing classic Japanese flavours with modern flair, Executive Chef Chase Kojima has drawn on the rich flavours of Western Australian Manjimup truffles to create an exquisite five-course menu. The delicious dishes include seared toro with truffle and chive, chawanmushi with spanner crab and truffle butter, Glazier 51 Toothfish served with aged saké and yakitori-style glazed wagyu cheek.

“We’ve used the best wagyu beef in the market. It pairs perfectly with the intensity of the truffle and creates a really special dish,” said Kojima.

Priced at $250 per person, the menu is available on Thursday 12 July. Enjoy the five-course meal with wines paired by Sokyo’s expert sommelier.

À la carte experience | 12 June – 9 August

Truffle specials will be available during the cooler months and will include favourites like the Chase Toro Toro with uni, toro and truffle ($22) and for a truly indulgent experience, the 9+ Rangers Valley 500g scotch fillet with finger lime butter and truffle ($250).

Balla

One-night-only experience | Thursday 19 July

Paying tribute to the incredible flavours of the Tasmanian black truffle, Executive Chef Gabriele Taddeucci has perfectly matched wines with dishes inspired by winters spent in Tuscany. Dishes include crispy Jerusalem artichoke and black truffle; torello rosé veal with porcini mushrooms and black truffle; and poached pear crostata with almond praline and truffle ice cream.

“As an Italian chef, I had to pay tribute to this incredible ingredient. We created a unique menu combining authentic Italian flavours with an intensity that can only come from the truffle,” said Taddeucci.

The truffle dinner is available on Thursday 19 July and is priced at $230 per person.

À la carte experience | 12 June – 9 August

Balla’s à la carte truffle menu is set to warm you up with special dishes such as the house-made organic durum wheat tagliatelle with black truffle butter and Reggiano ($36) and seared scallops with cauliflower purée ($26). The à la carte menu is available individually or as a four-course menu priced at $110 per person or $170 with matching wines.

Pizzaperta | 12 June – 9 August

Set overlooking Pyrmont Bay, Pizzaperta has incorporated this season’s favourite ingredient into their signature woodfired pizzas to create a limited-edition truffle pizza. The wood-fired truffle speck pizza is served with mixed porcini, fior di latté mozzarella, parmesan and shaved black truffle ($37) – the perfect pizza for the cooler months.

Fat Noodle | 12 June – 9 August

Combining fresh truffles with his signature Asian street food, chef Luke Nguyen has created a winter-inspired menu including seared scallops with black truffle, ginger and burnt-butter fish sauce ($22), and the Fat Noodle deluxe fried rice with jumbo prawns, spanner crab meat and shaved black truffle ($36).
