Ulu Cliffhouse Announces Key Hires

Primed to redefine the beach club concept in Bali, Ulu Cliffhouse, the ‘clifftop playground’ curated by a community of creative talent, has announced key appointments to oversee its operations ahead of its launch in September 2017.

Commanding panoramic views, the 50,000ft² clifftop oasis will offer an unparalleled beach club experience in Uluwatu like no other. The design-led space will feature a 25-metre infinity pool, an onsite spa, a boutique store, private beach access and tantalising food and drink options – from its terraced restaurant to a stunning cliffside bar, perched over the ocean.

Managing Director Jacques Dejardin; General Manager Marcus Boyle; Consultant Executive Chef Diego Muñoz; Group Beverage Director Albie Barratt; and Music Director Neil McLellan will be establishing Ulu Cliffhouse as a cutting edge offering appealing to those who want to relax or play, as well as a home for the island’s creative communities.

“We can’t wait to unveil Ulu Cliffhouse to the community, with the aim of upending the traditional beach club offering in Bali. Beyond cocktails by the beach, Ulu Cliffhouse will have its very own recording studio, a live music programme set to establish the venue as a leading music destination, and a cliffside bar perched on the rocks, offering guests a sundowner experience like no other,” said Jacques Dejardin, Managing Director, Out & Out Hospitality.

Ulu Cliffhouse’s on-the-ground team features the region’s most exciting talent, with a shared experience of managing renowned F&B and hospitality concepts around the world. Aligned with Ulu Cliffhouse’s goal of providing a 360-degree immersive beach club experience, the appointed team is set to deliver Bali’s next biggest destination in the heart of Uluwatu.  

BIOGRAPHIES 

Jacques Dejardin, Managing Director

With over 20 years of hospitality experience, from washing pots, to leading restaurant rollouts, Jacques has spent his whole career on the front line of F&B operations. Previously as Operations Director for Jamie Oliver Restaurants, Jacques developed a number of concepts including Barbecoa, and was responsible for the launch of five unique brands. He has led restaurant launches for Richard Corrigan, Jean-Georges, MEATliquor, Individual Restaurant Company and Gaucho, to name but a few. From boutique high-end independent establishments, to 300+ cover high volume branded businesses, Jacques has worked across the full spectrum of hospitality businesses. As Managing Director at Out & Out Hospitality, Jacques will be leading the project on all fronts, injecting his brand of passion and creativity across all touchpoints. 

Marcus Boyle, General Manager

Originally from Melbourne, Australia, Marcus Boyle earned his stripes across some of Australia’s best restaurants including Momo, Ezard, and Rickys in Noosa Heads. In 2009, Marcus moved to Singapore as the General Manager and Chief Sommelier for Tippling Club, and over an eight year span, he helped drive the restaurant to the Asia’s Top 50 and then further developing the group into four restaurant concepts. Marcus has had a keen inkling towards wine through his extensive travel and is a Certified Court Master Sommelier. He will be responsible for the overall setup, opening and operations of Ulu Cliffhouse, to deliver an unparalleled beach club experience encompassing the finest food and drink offerings, as well as unrivalled pleasure by the cliff. 

Diego Muñoz, Consultant Executive Chef

Diego Muñoz is a Peruvian Chef, a free rider and concept creator, aiming to explore and exchange through his culinary creativity. He has worked at Mugaritz and El Bulli in Spain under the lead of Andoni Luis Aduriz and Ferrán Adriá, transformed Bilson’s in Sydney, and subsequently moved to Lima to lead Astrid & Gastón, taking the restaurant to #1 on The Latin American 50 Best Restaurants List, and to #14 on The World’s 50 Best Restaurant’s List. Diego has been working on numerous projects around the world, but his true passion for travel, surf and culinary creativity has brought him to Bali where he will oversee all of our menus, bringing an assurance of quality and excellence with a nod towards Peruvian and Latin American influences.

Albie Barratt, Group Beverage Director

Albie Barratt has over 10 years of experience working within some of hospitality’s most respected and well known organisations across London and Asia. He began his bartending trade early on as Bar trainer for the Las Iguanas group, and has since led the drinks programme at acclaimed establishments like Jamie’s Diner Piccadilly and Fifteen London under the Jamie Oliver Group, Above Audio, and The Blind Group in Singapore. In his current role, Albie is Group Beverage Director at the Out & Out Hospitality group in Bali, where he will be overseeing all the beverage operations at Ulu Cliffhouse and KILN at Petitenget, in addition to future projects.

Neil McLellan, Music Director

With a track record of working with XL Recordings, Sony BMG Music Ent., Epic, Sire, Arista, Columbia, Maverick, Virgin, and Island Records, Neil has produced a string of No. 1 hits, as well as gold and platinum records. He has enjoyed success with acts including Madonna, Oasis, Carl Cox (and many more), but his most popular work began with the UK electronic music group, The Prodigy, mixing the hit singles Firestarter and Breathe. In 2004, he co-produced the group’s album Always Outnumbered, Never Outgunned, while co-writing some of the tracks. His latest album with the group was released in March 2015 by Take Me to the Hospital/Cooking Vinyl in the UK and Three Six Zero Group/Warner Brothers Records in the US. Neil will be leading the charge on establishing Ulu Cliffhouse as the ultimate music destination.
