Wild Bush Luxury, Australia’s conservation tourism specialist offering exclusive and inspirational experiences that reconnect guests with the land, has announced an exclusive food safari hosted by one of Australia’s most celebrated chefs, Christine Manfield.
The Top End Wilderness, Culture & Food Safari will take place at Wild Bush Luxury’s Northern Territory safari lodge and Luxury Lodge of Australia member, Bamurru Plains, between 26 – 30 April, 2020. Guests will be immersed in the untamed wilderness of the Top End, its distinctive flavours and ancient but thriving culture over four exciting days in Kakadu’s spectacular ‘green season’, with culinary aspects led by Christine herself.
Drawing inspiration from both the Top End’s native bush produce and south-east Asian flavour profiles from just across the Arafura Sea, Christine has joined forces with Bamurru’s talented chefs to weave the Top End’s distinctive flavour into an exciting food journey peppered with local ingredients.
Each day will be spent exploring the remote wilderness of Kakadu National Park and the Mary River floodplains right on Bamurru’s doorstep, returning each evening to savour Christine’s distinctly Top End cuisine in front of the lodge’s open kitchen, accompanied by matching wines.
When asked what excites her about the Top End food scene, Christine said: “it’s seeing the evolution of the Top End’s local cuisine; the bringing together of indigenous ingredients as well as introduced Asian ingredients into the everyday vernacular, creating a distinctive, regional flavour. In this context, as in any rural region really, it’s the connection to the land, cooking over fire, using what’s around you, food with character that tastes of ‘place’.”
Highlights of the safari include return scenic air transfers over the dramatic Mary River delta from Darwin, a full-day excursion in Kakadu National Park including a visit to ancient rock gallery Ubirr, a cruise along the wildlife-rich East Alligator River accompanied by an indigenous guide and an airboat safari across the Bamurru floodplains with locally-inspired canapes served on location.
