Kowloon Shangri-La, Hong Kong Appoints Angelini Head Chef

Timothy Wright, general manager of Kowloon Shangri-La,Hong Kong, is pleased to announce the appointment of Marco Medaglia to the position of chef at Angelini Italian Restaurant. 

Chef Marco is not new to theHong Kongdining scene as he joins the hotel from the Aqua Restaurant Group, where he served as Italian executive chef for three years.

Born and raised inChieti, a city in centralItaly, Chef Marco spent his childhood years in the restaurant and kitchen where his grandmother worked at.  This experience played an important part in brewing his passion for cooking.  While he was attending the Professional Institute of HotelPescara, he worked at a local restaurant on the weekends and for a couple of summers to acquire and sharpen essential kitchen skills.  At the young age of 18, he was already the chef de partie who oversaw the preparation of home-made pasta as well as all pasta dishes.

After honing his culinary skills under the guidance of experienced chefs in Chietiand Republicof San Marino, he wanted to reach the next level and decided to venture out at Stuttgart, Germany.  Under his tenure at Di Gennaro in Germany, the restaurant received recognition from the Michelin Guide and the Feinschmecker Guide.  For the next decade, Chef Marco’s culinary talent has taken him to the Michelin one-star La Terrazza inRome,Italy and Vincenti inLos Angeles, theUnited States, as a sous chef. He was appointed as the chef de cuisine at the five-star Riviera Golf Resort in San Giovanni Marignano, Sandoway Resort in Ngapali Myanmar and Puro Ristorante e Bar in Jakarta Indonesia, before moving to Hong Kong in 2009.

“For the past two decades, I have always taken on a simpler and lighter approach to Italian food,” said Chef Marco. “Simplicity is the keyword.  My goal is to showcase the natural beauty yet complex flavours of fine produces and fresh ingredients without adding heavy sauces.”

With the new menu, Chef Marco creates food that is pleasing to the palate as well as to the eyes.  Some of his signature dishes include Tartare of White Snapper, Sicilian Red Prawn, Buffalo Mozzarella and Fresh Tomato Coulis; Seared Scallops on Taleggio Cream and Truffle Caviar; Home-made Ravioli Pasta Stuffed with Lobster Mousse, Clams and Air Clams Water; Catalan Style Scampi and King Prawn with Lemon and Basil Jelly; Dover Sole Wrapped with Pancetta and Green Asparagus; Sweet Shrimp with Potato and Sea Urchin Sauce.
