Zafferano’s New Executive Chef Unveils Debut Menu

Chef Fabio Cucchelli has unveiled his debut menu at fashionable sky-high restaurant, bar and lounge Zafferano, perched atop Ocean Financial Centre in Collyer Quay.

image002 (1)Discerning Singapore diners can expect authentic Italian cuisine from Zafferano’s new Executive Chef Fabio Cucchelli who brings with him almost two decades of culinary experience across Europe before he was apprentice at Thomas Keller’s three Michelin-starred French Laundry in California’s Napa Valley.

Prior to joining Zafferano, he was Executive Chef of La Siriola of Hotel Ciasa Salares in the Italian Dolomites, where he earned one Michelin star after helming its kitchen for a year.

Chef Fabio’s debut menu in Asia showcases a modern adaptation of “classical northern and southern Italian cuisine, emphasising natural flavours and authentic origins”, he says.

image003Signature dishes include two ‘must try’ specialties for meat lovers — hearty charcoal grilled Black Angus t-bone Fiorentina alla brace steak with oyster mushrooms, shallots and bone marrow; and the Italian classic Ossobuco veal shin, braised in red wine with pilaf rice of toasted pine nuts, leeks and raisins.

His fresh mozzarella and cream Burrata Ravioli has a light touch, with basil and tomato passata sauce and roasted tomato confit.

The seafood signature, Astice alla busara Boston lobster, is served with chili tomato sauce, pine nuts and raisin pilaf rice, gratinated with crème fresche.

Chef Fabio’s dessert specialty is Sfoglia croccante alla mela of caramelised golden apple on crisp pastry with homemade Madagascar vanilla ice cream.

image004Apart from an extensive a la carte menu served all day, Chef Fabio also presents a daily two-course set lunch (S$38++) and four-course Degustation Menu of signature specialties at dinner (S$140++).

Complementing his cuisine is a 1,000 bottle walk-in wine cellar featuring an extensive list of wines by the glass.

An open plan kitchen with two separate show kitchens allows diners to watch the chefs at work from the 120-seater main dining area.

The Private Dining Room and Wine Room, respectively seating 14 and 12, have spectacular views and private entrances for dining in exclusivity.

At the heart of Zafferano is a circular bar crowned with a steel sculpture of a thousand saffron tendrils – after which the restaurant is named.

The alfresco glass-wrapped terrace, offering spectacular views of the city skyline, is the perfect spot to enjoy happy hour drinks and bar snacks, including truffle fries, oven fresh focaccia sandwiches and pizzas.

Zafferano combines authentic Italian cuisine, fine wines and a panoramic view of the Marina Bay waterfront for the ultimate dining experience.
