In 2019 Harbourside, InterContinental Hong Kong’s popular all-day restaurant, celebrates Asian cuisine with “A Taste of Asia”.

Every two months the Harbourside Weekday Lunch Buffet will pay tribute to the culinary specialities from a different country in the region with authentic dishes from each country – including Malaysia, Singapore, Thailand, Vietnam, Taiwan and India.

Between Jan 7 – Feb 22 (Monday – Friday) at the Harbourside Lunch Buffet, Harbourside Chef Nicholas Chan presents “A Taste of Malaysia” with an array of famous dishes as well as special family recipes from his home country.

Malaysian cuisine, representative of the vibrant multi-cultural country, is heavily influenced by nearby countries such as Indonesia, Vietnam, India and, Singapore and is characterised by flavourful dishes using various spices to ignite the appetite in the hot tropical weather.

Some of Chef Nicholas Chan’s Signature Malaysian Dishes which will be showcased on the lunch buffet include:

Malaysian Cuttlefish Salad馬來魷魚通菜沙律
This is a popular warm appetiser from Nicolas’s hometown of Penang, made with cuttlefish, water spinach and mixed with other ingredients in black shrimp paste (haeko).

Malaysian Sautéed Petai with Sambal, Pork Belly, Squid and Dried Fish馬來參巴風味小炒王
Despite its unique flavour and strong smell, petai (known as “sting beans”) is a “must-try” food in Malaysia. It is commonly fried with Sambal, one of the signature hot sauces/pastes in Malaysian cuisine, alongside with other seasonal products. Sambal is typically made from a mixture of chili peppers, plus shrimp paste, fish sauce, garlic, ginger, shallots, scallion, palm sugar, lime juice, and rice vinegar.

Nyonya Beef Rendang 娘惹巴東牛肉
There are many spice combinations with coconut used to prepare this beef stew, with each family having its own secret recipe. Enjoy Chef Nicholas’ own home recipe for Nyonya Beef Rendang for a truly authentic dish.

During the Harbourside Weekday Lunch Buffet there will also be a rotating action station with Malaysian Satay or Otak-Otak.

Harbourside is open daily from 6:00am – 12:30am
