A Whimsical Dinner at Lamarck University When Savoury Meets Sweet in Phu Quoc

Celebrating its second anniversary this year, JW Marriott Phu Quoc Emerald Bay continues the festivities with star chefs’ showstopping culinary duet set to wow diners at Pink Pearl.

This April, the immersive art deco dining experience Pink Pearl, the theatrical beachfront restaurant, set to become the stage for a mouthwatering culinary collaboration, as Chef de Cuisine Amine Ouameur Lakhdari teams up with award-winning French pâtissier extraordinaire Ophélie Bares to create, for the very first time, a unique ‘Two Chefs, Four Hands’ fine dining menu.

Conceived by the resort’s Master of Ceremonies, designer Bill Bensley, Pink Pearl is inspired by the tale of Madame Pearl Collins, whose extravagant gastronomic soirees at this beachfront art deco mansion became the stuff of Phu Quoc legend. In this dramatic setting, Chefs Lakhdari and Bares will bring together their unique talents to write a new chapter to Pink Pearl’s decadent history, tantalising guests with an innovative one-off tasting menu.

Chef Bares formerly trained at the Chateau de Chantilly’s two Michelin star restaurant and Hotel Plaza Athénée’s three Michelin star restaurant, and was also awarded Best Pastry Chef by Le Chef Magazine.

Extensively travelled, the Asian culture holds a huge influence with Bares who says that she is looking forward to “discovering the daily life of the island, its inhabitants, habits, as well as local products.” As an established pastry expert, Chef Bares will bring with her a breadth of pastry techniques to explore Phu Quoc’s indigenous ingredients.

Chef Lakhdari, Chef de Cuisine of the resort’s French fine-dining concept Pink Pearl, offers a menu which refreshes every few months and showcases the finest seasonal ingredients using classic French methods. Working alongside Chef Lakhdari, Bares will take this intrigue to curate a guest-chef fine dining menu of original dishes which fuse the best elements of each chef’s talents and surprise the guest.

From 27 April to 1 May 2019, both chefs will present a limited-time only menu featuring authentic French savoury recipes fused with unexpected applications of pastry techniques, and a delicate balancing of sweet, savoury and spice.

The exclusive menu will feature a choice of five or seven courses, and a range of finest seasonal ingredients, both local and imported, such as Pertuis Green Asparagus, Oscietre Caviar, Japanese sea urchin and Wagyu beef, and Marou Chocolate. True to the resort’s whimsical design narrative, the menu will remain a surprise until on the day of, and only revealed to guests as they dine.

Diners will be able to enjoy this gastronomical menu for VND 3,700,000* (5-courses) or VND 4,900,000* (7 courses) per person. Wine pairing can be opted for an addition of VND 1,850,000* per person.

For a more immersive experience, guests can reserve the “Whimsical Gastronomic Journey” experience package which includes the following:

  • Two-night stay in Emerald Bay View Room
  • Breakfast for two at Tempus Fugit
  • A Two-Chef, Four-hand fine-dining experience for two at Pink Pearl (excluding beverages)
  • Round-trip airport transfer

To fully enjoy the dining experience, add-on options for the “Whimsical Gastronomic Journey” stay package are available to guests.

  • Upgrade to a seven-course dinner (VND 1,200,000*)
  • Wine pairing during dinner (VND 1,850,000*)

Prices start at VND 22,700,000 per room, exclusive of taxes and service charge and based on two persons sharing a room. The package is available from 27 April to 1 May.
