Celebrated chef Adam D’Sylva will draw inspiration from his family history and local experience to design a modern menu of contrasting cuisines at one of W Melbourne’s signature restaurants, Lollo.

Working with the hotel’s Executive Chef Jihun Kim, the pair will create a menu that is as familiar as it is unexpected to highlight Australia’s unmistakable local fresh produce.

The 110-seat restaurant will revel in Melbourne’s multicultural heritage and amplify the ingredients sourced from its doorstep; revealing a menu of remixed classics sitting alongside bold innovations.

A place to come together and celebrate, Lollo will be an extension of D’Sylva’s story to date – eclectic, bold and modern – with a chef-driven menu of sharp, fragrant flavours, designed to be shared. Think celebratory long lunches that lead to an after-hours drink in Curious, the hotel’s destination cocktail bar.

Taking diners from day to night and beyond, Lollo’s vibrant drinks list showcases the best of Victoria’s coveted wineries and breweries, paired with cocktail creations that play on the unexpected.

A healthy balance between the old world and new, about 70% of the extensive wine list will be Australian, almost half of that from Victoria. A large selection of prestige Champagnes and over 35 wines will be available by-the-glass, where favourite classic varietals sit alongside a few quirky choices.

Executive Chef and Co-owner of award-winning restaurants Tonka and Coda, D’Sylva’s mixed heritage has given him a strong foundation in different flavour combinations that showcase fresh and local ingredients.

Enjoying the enviable reputation as one of Australia’s most prominent chefs, his interest in cooking began as a child growing up in a mixed heritage Indian and Italian family, where his Italian mother was a major influence on his decision to follow his passion for cooking.

D’Sylva began his apprenticeship in Melbourne and then explored his love of food, travelling through Europe and Asia and working in restaurants in the Marche region of Italy and Hong Kong.

On his return to Australia, he became Head Chef under Geoff Lindsay at Pearl and then Head Chef at Longrain Melbourne for Martin Boetz.

D’Sylva will be responsible for the vision of Lollo alongside Kim, who will oversee all B&F at W Melbourne including Curious, Japanese restaurant Warabi and café come wine bar Culprit.

Kim has enjoyed a fruitful career leading the B&F teams at several Ritz-Carlton hotels, including The Ritz-Carlton, Millenia Singapore and The Ritz-Carlton Golf Resort, Naples. He was also part of the team who launched W Dubai – The Palm, overseeing culinary operations across four of the hotel’s venues.

In addition to this, Kim has trained at 3 Michelin starred restaurants across Europe and Singapore including Restaurant Aqua at the Ritz-Carlton in Wolfsburg, Germany and Massimo Buttura’s, Osteria Francescana in Modena, Italy.
