Raise a glass to sustainable wining and dining at Forest, Byron Bay, where award-winning guest sommelier Matt Dunne and winery Craggy Range will host a conscious wine dinner on Thursday, 15 April 2021.

Set next to a lush rainforest oasis within Crystalbrook Byron, Forest celebrates sustainability by working hand-in-hand with local farmers, growers and artisans.

 A continuation of Forest’s commitment to offering locally sourced and sustainable dining, the four-course menu will complement a curated selection of Craggy Range Wines. The menu highlights local seasonal produce, with standout dishes including asparagus and brie velouté with a black truffle emulsion, a local lobster ravioli, and braised Bangalow Pork belly for the main.

Forest Beverage Experience Manager, Brad Wakefield, said “the dinner is an opportunity for both Forest and Craggy Range to celebrate our passion for sustainability while showcasing the abundance of Northern Rivers’ produce.”

“A wine journey should always be fun, whether you are a connoisseur, or if you’re just starting out,” said Dunne. “I’m looking forward to matching the exceptional qualities of the Craggy Range wine to the amazing dishes in Forest to really bring out their flavours.”

In 2015, Matt Dunne was awarded a scholarship to the prestigious Len Evans Tutorial held annually in the Hunter Valley which legendary wine writer James Halliday refers to as the ‘most exclusive wine school in the world’.

 Craggy Range is a family-owned winery situated in the shadow of the spectacular Te Mata Peak in the premium wine growing area of Hawke’s Bay New Zealand. Craggy Range is committed to sustainability and giving back to the region having embarked on the largest biodiversity project in the New Zealand wine industry, planting 150,000 native trees and plants in and around their Te Muna Road vineyards.
