Nineteen restaurants and bars at AYANA Resort and Spa, BALI have been awarded the prestigious Hazard Analysis and Critical Control Point System (HACCP) certification in Indonesia. The HACCP certification is highly regarded in the hotel and food industry.A recommended control system for the hygiene of a food products, HACCP is a prevention-based system to ensure food safety and hygiene. The rules associated with HACCP are adopted internationally as the basis for all discussions on food safety and prevention against potential dangers including food poisoning and the presence of chemicals and foreign particles.


The concept of HACCP was initiated in the late 1950s when the United States launched the process to ensure food without harm. In the early 1980s, the United States National Academy of Sciences and International Commission on Microbiological Specifications for Foods (ICMSF) officially launched the HACCP system.

The HACCP certification confirms that a hotel is operating at a very high standard for food safety and quality, requiring extensive training and due diligence by every team member that is involved in food preparation and presentation.
