Contemporary Korean vegetarian restaurant Soil to Soul is welcoming springtime with a “Beyond Vegan – Spring” afternoon tea set in collaboration with natural, vegan, cruelty-free Hong Kong skincare brand SKIN NEEDThe delightful spread of signature and new savoury and sweet vegetarian delicacies inspired by Korean temple food is launched in the run-up to Mother’s Day from 22 March to 10 May 2021, priced HK$498 for two.

One of the very few Korean afternoon tea experiences in town focuses especially on plant-based seasonal spring ingredients and colourful presentations, featuring both signature favourites and completely new creations, available daily from 3:30 pm to 6 pm.  The treat for mums also includes a gift of SKIN NEED’s California-made CAREFREE Light Hand Cream (40 mle) in original size, valued HK$98.

New savoury recipes of the “Beyond Vegan – Spring” afternoon tea set include Rice Paper Roll Wrapped with Fresh Veggies and Deep-fried Japchae Roll, along with popular ‘Kimbap’ Korean Seaweed Rice Roll and Rice Ball with Assorted Jangajji.

Among sweet treats, Sticky Rice Cake with Chestnuts and Red DatesKorean Mochi and Walnut Tart are all new recipes, with signature favourites Korean Rice BiscuitWalnut & Dried Persimmon RollSoy Bean Paste Madeleine and Sesame Crackers.

The “Beyond Vegan – Spring” set includes complimentary Korean herbal tea or hand-crafted Korean-themed mocktails for two, with a choice of Duyu (strawberry, pear, soy milk), Sinsunhan (fresh berries, lemon juice, soda), Guaba (guava juice, apple, lime, soda water) or O-yee (fresh cucumber, apple juice, mint).

Internationally-experienced ‘World Master Chef’ Gu introduces a contemporary interpretation of temple-style cuisine to Hong Kong at the helm of Soil to Soul.

 Similar to the ‘Farm to Table’ process, from growing and gathering to preparation of dishes, all natural characteristics and flavour of ingredients are retained, with temple food philosophy also encouraging a minimalistic diet – “eating only as much as you need, for minimal waste and environmental pollution.”

In accordance with monastic principles, five pungent ingredients believed to distract minds with impure thoughts are avoided – garlic, green onion, leek, chive and onion.  Soil to Soul also adheres to a righteous natural order with a ‘humble, grateful heart’ without polluting or harming nature, mindful that just as the body and mind, humans and nature are one.

Soil to Soul offers discounts of up to 40% on takeaway special orders after 6 p.m., for stay-home celebrations, including Mother’s Day.

Seating 106, the refined 3,380 sq. ft. restaurant and bar incorporates elements of wood and earth inspired by the Chinese philosophy of “Wuxing” – the five phases of fire, water, wood, metal and earth.  Using wood flooring and seating as foundation, a spacious interior stimulates air circulation and glass enhances space, encouraging interaction between light and air, and an overall ‘soul to roots’ concept bringing peace of mind.

An oblong-shaped bar with spectacular harbour view is the key focus, styled as a contemporary Korean oasis blending traditional and modern with a touch of theatrical intimacy.  Three VIP rooms, including one with harbour view, offer ultimate privacy and exclusivity.
