In recent months, I have become more aware of my footprint on the planet and I have been trying to lead a more sustainable life. One of the changes that I implemented was to cut down on the amount of meat I eat. I now only eat meat once or twice a week and the rest I eat veggie or fish dishes. This means I am constantly looking for inspiration for my meals.

One of my favorite recipes that I have found so far is broiled spanish mackerel which just happens to be suitable for anyone who is following a keto diet. I don’t know about you, but I love mackerel. It is so full of flavor and health benefits such as being full of vitamins, protein and omega 3 which is vital for heart health.

The Cook.me recipe not only tastes delicious, it is so easy to make and only takes about 35 minutes from start to finish. I started out by heating the broiler. I brushed the mackerel fillets with some olive oil and placed them in a baking dish. I seasoned each one with paprika, salt and pepper and placed some lemon slices on top. 5-7 minutes under the broiler and the fish was cooked and ready to serve with steamed broccoli.
