Begin your unusual Loire Valley gastronomic journey with one of the most celebrated regional dishes, Duck Rillettes. It is made with small chunks of duck meat and fat that are slow-cooked in the oven for hours for a tender texture and then chilled in the refrigerator. Enjoy the delicate texture and rich flavour of the potted-duck spread with crispy toasts to delight your palate! Continue the journey with other signature dishes from the region including the Poulet en Croute. The premium chicken breast handpicked from Loire Valley is covered with Thyme, Rosemary, Parsley and baked to deliver a crusty skin with tender texture for your enjoyment. With the Royal River meanders through the region, Loire Valley has an abundance of seafood such as Zander Fish that is esteemed for its light and firm meat with delicate flavours. Our chefs specially craft this hearty fish with the butter-based Dill Beurre Blanc Sauce, enriching the taste without overshadowing its natural umami flavour. Be sure not to miss a range of indigenous sausages, especially the Andouillettes with Pickles, which brings you a concentrated and indigenous Loire flavours!

Mirage Bar & Restaurant presents an indigenous 3-course dinner in celebration of Le French GourMay, offering authentic appetizer, main courses and dessert with distinctive Loire Valley wine-pairing options to whet your appetite! The dinner starts with an intriguing appetizer Tart of Salmon Rillettes, which offers you complex flavours formed by Salmon, Roe, Chive and Sour Cream. Your palate will be freshened up with the fresh, floral and citrusy flavours of the lightly sparkling Domaine de la Taille aux Loups “Triple Zero”, Montlouis sur Loire NV. It uses the champagne method in producing the sparkling wine without adding additional dosage. The exquisite options of main dishes, including the Pan-Fried Zander Fillet with Sauvignon Blanc Butter Sauce, paired with Michel Redde et Fils, “Petit F”, Pouilly Fume 2017 with lively and mineral notes, bringing you a perfectly balanced and fresh flavours to your palate. While steak lovers can opt for Tournedos of Beef, a local steak garnished with exquisite Foie Gras and seasoned with flavourful Truffle Gravy, which brings you an unforgettable indulgence with a glass of Domaine de la Chevalerie, “Vin de Garde”, Bourgueil 2005! Complete the night with a sweet note by savouring the classicFrench Apple Tart! The simple yet delicious recipe highlights the sweetness of apples on top of the puff pastry.

The set menu is available from 1 – 31 May 2019, from 6 p.m. to 10.30 p.m. and priced from HK$ 428 up per person. Add HK$ 180 to pair with two glasses (125ml each) of Loire Valley wines.
