Chef Patrick Benedetti brings more than two decades of global experience in the culinary arts to Caffe Mondo, the Italian restaurant at Four Seasons Hotel Guangzhou.  Born in the historical city of Florence, known for its rich culture and famous wines and cuisine, Patrick knew as a young boy that his passion for food and cooking would be his calling. Now, he is showcasing his extraordinary talents set among the beautiful vistas of the city’s skyline on the 72nd floor of the Hotel.

The new menu that Chef Patrick has painstakingly selected from among his favourite dishes will be featured from today onwards.  “Some guests may not be strangers to the new dishes, as they can easily be found in a typical restaurant in Italy,” says Chef Patrick. “My vision is to grow Caffe Mondo into a culture of gastronomic excellence. Accentuating the contemporary communal design concept found at Caffe Mondo, the new a la carte menu showcases fine quality ingredients sourced locally and from Italy, which include a range of tantalising starters, including the classic southern Italian antipasto baked eggplant (parmigiana) and the pecorino cheese salad with porchetta. A must-try for gourmets is the tempting seafood salad with fresh clams and tiger prawns.”

Caffe Mondo offers a variety of home-made pastas daily. Worthy of mention is gigli pasta, the most popular among them, due to its unique lily flower shape. Chef Patrick creatively incorporates black truffle and porcini mushroom to enhance the flavour. He also recommends the traditional pesce al cartoccio, or oven-baked fish in foil. With 40 minutes in the oven, the red snapper absorbs all the essence of the clams and white wine. This mouth-watering dish is perfect for sharing with both family and friends.

“Grandma is my inspiration in cooking. I feel like it’s amazing that she can magically turn raw ingredients into delicious feasts,” says Chef Patrick.

His new menu at Caffe Mondo also features two dishes that have been inherited from his grandmother – fettuccine with traditional beef Bolognese sauce, and Grandma’s homemade tiramisu.  For more details and reservations, call 86 (20) 8883-3373.
