Tea with a twist from Jasmine White Tea and white chocolate to Xihu Longjing and mascarpone, Da Hong Pao and dark chocolate…… Savour the bittersweet tea-infused chocolate creation at Yuan and rediscover the love of tea for an unique leisurely afternoon you will never forget!

Our single original Trinitario cocoa is from Ben Tre province of Vietnam. Different from African cocoa, Vietnamese cocoa features a typical tropical fruits acid because of more humid climax. Compare with chocolate bars, Vietnamese cocoa is better used for desserts.

Mousse – White chocolate/ Jasmine white tea/ Mango and jasmine jelly

Fuding is well-known for the production of white tea, green tea and black tea. Beside the most famous White Peony, the Jasmine white tea is also a feature. Put the jasmine buds and green tea together. The green tea will absorb the smell of jasmine slowly. Take the jasmine out and make dry the green tea. It becomes the typical Fuding Jasmine White Tea. This dessert is 2.0 version of NUO signature jasmine mousse.

Financier – Xihu longjing picked before Grain Rain/Pineapple confit /Mascarpone

Longjing tea is one of the most well-known green tea. Different from the Longjing picked before Pure Brightness, Longjing picked before Grain Rain is deeper the green color and more refreshing. It will bring the balance to the sweetness from the pineapple confit and the round body from butter and mascarpone.

Choux – Milk chocolate / Dark chocolate / Da Hong Pao / Milk chocolate cream

Da Hong Pao owns a specific thick, floral and long finishing character. We infuse this character into chocolate cream. It brings more abundant structure to the chocolate.

Macaroon – Xihu Longjing picked before Qingming / 72% dark chocolate ganache / chocolate

Longjing is the most seasonal tea during spring. Longjing picked before Pure Brightness leaves its delicate sweetness to the dark chocolate. You might not have a strong impression while you having it, but will suddenly remind yourself its flavour when you experience a slightly raining afternoon.
