Embodying a classic yet unexpected expression of champagne through the prism of Dom Pérignon, Dom Pérignon Vintage 2008 is now unveiled for the first time in Macau, starting at the iconic setting of Alain Ducasse at Morpheus in City of Dreams, Macau. On February 15, invited VIP and media guests were the first in Macau to experience the remarkable 2008 vintage through two-Michelin-starred gastronomic pairings.

Only three months after the launch of Dom Pérignon Vintage 2008 in Hong Kong, the new iconic vintage has finally arrived in Macau only at Alain Ducasse at Morpheus, City of Dreams. City of Dreams is the only resort in the world to house a dedicated Ducasse Restaurant dining floor, which  features a fine-dining restaurant Alain Ducasse at Morpheus, a French bistro Voyages by Alain Ducasse and also a bar. The resort’s ultra-luxurious Morpheus hotel has been named one of the ‘World’s Greatest Places 2018’ by Time Magazine just two months after its opening.

Following the distinguished collaboration between Dom Pérignon and legendary chef Alain Ducasse around the launch of Dom Pérignon P2 Vintage 2000, the arrival of Dom Pérignon Vintage 2008 in Macau marks the beginning of a renewed creative partnership with the chef this year. From its origins, Dom Pérignon, created in a spiritual environment for the tables of kings, has held a dual allegiance to the sacred silence of its cellars and the elaborate rituals of sophisticated dining. These twin spheres of creation and discovery form a close and exceptional partnership that is a potent source of creative genius.

Dom Pérignon Vintage 2008

The singularity of Dom Pérignon Vintage 2008 brilliantly completes the line of Dom Pérignon vintages before it. Dom Pérignon vintages set their own release dates, and Vintage 2008 required more patience than Dom Pérignon Vintage 2009, which was presented earlier – an unprecedented event in Dom Pérignon’s history. While 2008 was a year dominated by grey and overcast skies, September was the miracle month that saved the vintage with perfect blue skies and prolonged north-northeasterly winds. The grapes were riper than anyone dared hope, and gave way to a consummate balance that is the enduring signature of Dom Pérignon. On the nose, Dom Pérignon Vintage 2008 elicits a complex and luminous bouquet of mingling white flowers, citrus and stone fruit. The overall effect is enhanced by the freshness of aniseed and crushed mint. The final aromas are an earthy blend of spicy, woody and roasted notes. On the palate, the wine slowly opens up to reveal a complete balance with the nose. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced and clear, and its persistence is mainly aromatic, grey, smoky and highly promising.

Dom Pérignon Vintage 2008 enjoys duality: warmth and freshness, meat and iodine pairings, cooked and raw. Spices enhance and accentuate the vintage’s effervescence and densify the wine.
