Accor & sbe Entertainment Group have now opened their first world class venue in Australia, with Hyde Paradiso, overlooking the Pacific Ocean in Surfers Paradise, QLD.

Hyde Paradiso is a premium lunch and dinner venue, with a menu plucking laid-back dining rituals from the juiciest parts of the Mediterranean.

“The Autumn menu is seasonal and local featuring a vibrant mix of Greek, Turkish, Moroccan, Lebanese and Italian cuisines,” said Executive Chef Joel F. Bryant.  “Each dish is inspired by my travels throughout Europe and the casual tapas style of service enjoyed in cities like Barcelona and Lisbon.  Our food embraces the culture of social sharing, with fresh light dishes designed to complement sea views, while guests are sipping tasty cocktails and refreshing wines,” Bryant said.

The menu at Hyde Paradiso kicks off with a selection of traditional house made dips like hummus, smoked eggplant and Taramosolata all served with a choice of breads baked on sight daily.

Seafood, whole grains and vegetables leap to the fore on the small and medium share plate menu, where dishes like sumac, salt and pepper squid or kale and pecorino arancini are suited to casual grazing. For larger groups and festive occasions, the family style menu offers succulent Portuguese chicken served with chickpea salad, or whole baked reef fish baked with roasted fennel.

At the bar, guests can acquaint themselves with easy drinking white styles and varietals like Prosecco and Vermentino from Italy, or ease into Sunday Sessions over a casual Jeroboam of Aix Rosé from Provence in the South of France! On the red wine menu, light and juicy styles dominate, with Sangiovese, Grenache and Pinot Noir all calling out to be paired back to juicy BBQ octopus or enjoyed the 60-day aged op rib with roasted tomato.

For cocktail lovers there’s no chance to miss the Hyde Paradiso signature drink – a sweet and refreshing Sgroppino. The Hyde Paradiso Sgroppino will take the classic Venetian cocktail of sorbet, prosecco and limoncello and turn it on its head, with three flavours to choose from. A dedicated bartender will serve a range of Sgroppinos including the Aperitivo Sgroppino made with strawberry sorbet, Pimm’s and Prosecco. The overall drinks focus at Hyde Paradiso be sensationally large format with drinks appropriate for imbibing all times of day and night.

Bottomless Brunch, the socially acceptable excuse for day drinking, best enjoyed with friends is available across the weekend from 12pm offering guests the very best selection of signature dishes and cocktails for $89 a head. Whether it be on a table of four or exclusively in the Hydeaway Sgroppino Bar guest can truly live like they are in Hollywood with the Dom Perignon package sitting at a cool $359 each.
