Known for its epicurean creations that reveal aromatic complexity, combinations of flavours and powerful tastes that evoke emotions, the cuisine at La Dame de Pic, Raffles Singapore showcases a clever symphony of flavours, cooking techniques and its signature touch of incorporating herbs and elements from local and regional markets. Savour exquisite dishes that reveal influences from the Asian region while staying true to the essence of Valence, Chef Anne-Sophie Pic’s birthplace.

Available for lunch and dinner, the Experience and Elegance set menus provide a multi-course gastronomic experience with the option of wine pairing to enhance the meal. Guests who select the Experience menu (S$248++ per guest) can indulge in new flavour combinations including refreshed favourites like the Tomato Myriad, a colourful selection of sun-ripened summer tomatoes enlivened with tomato consommé with a touch of elderflower and accompanied with Burrata ice cream. A delectable new entrée, the Tuna Belly from Hokkaido features a decadent tuna belly perfumed with the flavours of ginger flower, pandan leaf and Tasmanian pepper, and paired with watercress juice with hints of pine tree and bergamot leaf.

With the Elegance menu (S$338++ per guest), revel in the exquisite starter of Brown Crab from Brittany and Oscietra Caviar, paired with a vine peach broth infused with sencha. For entrée, savour the magnificent Wild Langoustine from Norway, cooked a la plancha and presented with a beetroot myriad, and kombu seaweed broth enhanced with beetroot, hibiscus and lapsang souchong tea. The fish course unravels as a choice of Turbot from Brittany, cooked meuniere style and heightened with a zesty light broth of green zebra tomatoes and gallium odorant with fresh verbena; or the signature Wild Sea Bass with Oscietra caviar and Champagne sauce created by Chef Anne-Sophie Pic’s father in 1971.    

Chef Anne-Sophie Pic’s iconic Berlingots, which are presented in all of her restaurants around the world and are adapted to showcase local touches, are also given a refresh at La Dame de Pic, Raffles Singapore with new colours and produce combinations. This summer, these berlingots with a molten French fondue centre are paired with almonds and sunflower seeds and a delightful pea broth accented with herb of grace, a distinct herb she discovered at a Chinatown market in Singapore. The signature Berlingots are presented in both the Experience and Elegance menus.

Other signatures that are available on both these set menus include The Pigeon from Bresse, carefully roasted on its chest and complemented with a lightly smoked broth infused with Madagascan vanilla, roasted barley, Phú Quốc pepper and kumquat; and the Saga Wagyu Beef, marinated with a clever interplay of Southeast Asian flavours from Kampot pepper, sake and sobacha before being cooked over coals and plated with butter-roasted celeriac and black garlic mayonnaise.

To end the meal on a sweet note, guests can also choose from a selection of luxurious desserts, including the new Alpaco Chocolate with hojicha and cubeb pepper light mousse, and the refreshed Gariguette Strawberry, which presents the finest summer strawberries alongside genmaicha light mousse and an uplifting coconut and lemon verbena sorbet. After dessert, opt to add on an assortment of fine cheeses presented from the artisanal trolley for a truly memorable finale.

Perfectly suited for busy executives, a 3-course lunch experience is also available on Friday, Saturday and Sunday, excluding Public Holidays, at $128++ per guest.

Helmed by Chef de Cuisine Kevin Gatin who has been a protégé of Anne-Sophie Pic for over ten years and is personally handpicked by her to lead the kitchen at La Dame de Pic, Raffles Singapore, guests can expect to venture on an exquisite culinary journey like no other, as they uncover and delight in the various masterpieces of Chef Anne-Sophie Pic.

Enhanced safety and hygiene measures

As we navigate through the ongoing pandemic, Raffles Hotel Singapore continues to embody the philosophy that guides our service excellence, whilst maintaining the highest hygiene standards to safeguard the health and wellbeing of all our guests and staff.   • Opt for disposable cutlery or arrange for private dining within suites

Specific to staycations, the following measures have been taken:

  • Suites will be kept vacant for a 24-hour window between departures to ensure optimum cleanliness and sanitisation procedures are applied.
  • Increased sanitisation of high-touch points using medical-grade disinfectants and a daily disinfection process of the in-suite minibar with hygiene seal.
  • Air filters will also undergo cleaning at an increased frequency.
  • Guests are empowered with contactless check-in and checkout procedures, cashless payments, contactless in-suite dining and housekeeping services with safe distancing, to further ease any discomfort.
