Ozone Bar Manager Oscar Mena has created three exclusive cognac-based cocktails made with Hennessy V.S.O.P, a harmonious and well-structured cognac with a remarkably lasting finish. A variation of the classic sidecar with Hennessy V.S.O.P, Cointreau, fresh lemon juice, and mint leaves, Green Jungle is a well-balanced concoction with a subtle touch of sweetness. Inverted Bubble Falls, served in a champagne glass and lined with a twisted orange peel, is built with cognac, St Germain elderflower liqueur, a sugar cube dipped in vanilla bitters and topped with Moët & Chandon champagne. This bubbly cocktail is very easy to drink. Last but not least, The Highest Forest, shaken and strained into a coupette glass, is undoubtedly a ladies’ favorite. The fruity, summery cocktail contains Hennessy V.S.O.P, fresh raspberries, and fresh lemon juice. The Luminous Jungle Night Brunch menu is inspired by the fascinating and diverse cuisines of South America, from Brazil and Argentina to Peru and the Amazon rainforest. The jungle-themed free-flow menu with Asian influences features seven scrumptious savory dishes and two sweet items that you can binge on to your heart’s desire.

 

To start, the colorful salmon ceviche is excellent for prepping your palate with fresh and citrus notes of lime, passion fruit and dry cachaça. Quinoa, highly nutritious and a staple food of indigenous people of the Andean region, lends a crunchy texture to this refreshing dish.

Not to be missed, the Japanese-Brazilian maki duo, topped with beef tataki, can be paired with a creamy heart of palm dip, which gives the dish a delicate, slightly nutty flavor that enhances the richness of the beef. 

A South American-inspired menu is not complete without a few hearty meat and fish dishes. Meat lovers will be delighted to know that juicy Brazilian-style grilled chicken skewers with “achiote” salsa and aji criollo; the ultra-tender grilled halibut in banana leaf; and grilled picanha steak – cooked to medium rare and served with chimichurri – are some of the highlights of the menu.

For dessert, roasted pineapple with vanilla, rum and coconut ice cream adds a sweet, exotic touch to the Night Brunch experience, while the crispy green banana fritters with açaí and chocolate sauce are impossible to stop at just one.
