Peranakan cuisine conjures up images of respectable matriarch presiding over a household, and whipping up Nyonya dishes with aplomb. Famously elaborate, traditional Nyonya cooking demands a myriad of spices, laborious preparations and fastidious techniques – a labour of love indeed.

This Mother’s Day, Chef Jeffrey Tan pays culinary tribute to the beloved “matriarch” in our midst by drawing inspirations from one of his best-kept secrets – passion for Peranakan cuisine. Delight in an enhanced lunch buffet featuring over 10 enticing Nyonya delicacies, in addition to the western mainstays. These “off-menu” Peranakan specialities are perfected based on Chef’s treasured recipes, and are typically prepared upon requests for special events and functions in the hotel.

Tease the palate with Ayam Sambal TimunNyonya Achar, and Gado Gado, before tucking into unlimited servings of Peranakan staples such asAyam Buah KeluakSambal Kimchang UdangNyonya Chap ChaiCincalok Omelette, and Nyonya Otak Otak. Made-to-order items like Nyonya Laksa and Peranakan-style Popiah featured at the action stations are not to be missed. Save space for an assortment of luscious Nyonya Kueh Kuehand warm Bubur Pulut Hitam to conclude on a sweet note.

Making the buffet all the more inviting is an array of international selections including western appetisers, handmade sushi and maki rolls, as well as contemporary choices of Roasted Buttermilk Herb-crusted Leg of LambCrispy Whole Duck Confit with Kawi and Orange Salsa VerdePan-seared Fish Fillet with Lemon Schnelle HollandaiseFrench Wine Beef and Vegetable Root Stew, among others.

The little ones in the family will be well taken care of with a dedicated buffet that includes Spaghetti with Meat Balls, Fish Fingers, Nuggets and French Fries. A kids’ play zone will be available to keep the juniors entertained.
