Restaurant Petrus at Island Shangri-La, Hong Kong welcomes the rising superstar French female chef, Stephanie Le Quellec, for a four-day sojourn as guest chef from 3 to 6 June 2019.http://www.stevecafeandcuisine.com/  During the promotion period, apart from lunch, dinner and a special four-hand menu, three exquisite wine dinners will also be available for that ultimate experience of fine food and wine.

The gifted Chef Le Quellec, famously known as the winner of Top Chef in France and the former executive chef of the Michelin two-starred La Scène at the Prince de Galles, will be working together with Restaurant Petrus Chef de Cuisine Ricardo Chaneton to create a series of compelling lunch and dinner menus as well as a special four-hand menu where both chefs work side by side to present their best body of works.  Dishes created by Chef Le Quellec are composed with measured, precise and sophisticated simplicity, due to her strong belief in focusing on generosity and the quality of exceptional produce.  (Please refer to appendix I for menus)

‘I like to get to the heart of the matter,’ said Chef Le Quellec, ‘I want my cooking to be understandable, so that my compositions make sense.  I devise menus that are precise, effective, seasoned and yet fun.’

In addition, Master Sommelier and Assistant Vice President of Regional Wine Programme Yohann Jousselin takes inspiration from Chef Le Quellec’s awe-inspiring dishes.  He will present three exceptional wine-pairing dinners between 4 and 6 June 2019, highlighting an exorbitant collection of wines from a different region of France each night.  (Please refer to appendix II for menus)

4 June 2019 (Burgundy) – Featuring wines Domaine de la Romanée-Conti with vintages ranging from 1971 to 2012

5 June 2019 (Champagne) – With rare vintages from Krug, Dom Perignon, Bollinger and many more

6 June 2019 (Bordeaux) – A vertical wine tasting evening of Château Cheval Blanc

About Chef Stephanie Le Quellec 

Chef Le Quellec grew up in a family that always considered good food to be one of the core values.  After receiving top grades for her hotel and restaurant management course, she served apprenticeships with three of France’s most accomplished craftsmen from Meilleur Ouvrier de France.  She gained extensive experience in the early days of her career in Paris, where she worked alongside Michelin-starred chefs Philippe Legendre at the George V Four Seasons in Paris for three years and Philippe Jourdin at the Grand-Hotel du Cap-Ferrat for six years as his sous chef.

In 2000, Chef Le Quellec entered the reality competition television series Top Chef in France.  With her outstanding performance, she was named the ultimate winner and brought home the grand prize.

In 2014, under the helm of Chef Le Quellec, Prince de Galles’ La Scène, a restaurant which newly opened after the hotel’s complete restoration, was awarded one Michelin star for the first time in its history.  Subsequently, it received the Michelin two-star honour in 2019.
