With Chef Li’s loving attention to the flavours and ingredients synonymous with the New Year, this celebratory menu includes Braised Dried Oyster with Black Moss and Vegetable (HKD280); Pan-Fried Chicken with Ginger (HKD280); Stewed Fish Ball with Turnip (HKD320); Braised Fish Curd with Crab Cream (HKD380); Deep-Fried Beef Cubes with Salty Egg (HKD580); Double-Boiled Fish Maw with Matsutake Mushroom and Bamboo Pith (HKD580); and succulent Wok-Fried Lobster with Dried Chili, Garlic and Spring Onion (HKD880).

Honouring the sweeter side to meaningful festive repasts, diners can feast with loved ones with The Legacy House’s premium Chinese New Year Pudding. The delicious puddings come in dual flavours: glutinous rice for a sweet dessert to celebrate the Spring Festival (HKD238), and savoury turnip (HKD238) – both especially made to a heritage recipe. Available to purchase at Butterfly Patisserie and the hotel’s eShop, the puddings are housed in a playful, elegant box featuring gold brushstrokes inspired by Victoria Harbour and the water views which abound at Rosewood Hong Kong, as well as the iconic Star Ferry for a true sense of place; heralding fresh beginnings for the New Year.

A menu speciality is Chinese seafood soup packed with the nourishing goodness of Shredded Abalone and Mushroom, Fish Maw, Sea Cucumber, Conpoy, Vegetarian Shark Fin, Chicken and Bamboo Pith.

This can be followed with either Braised Lettuce with Dried Oyster and Black Moss, or Sautéed Scallop and Prawn with Broccoli, rounded off with a delicious Pan-Fried Glutinous Rice Cake or Sweetened Red Bean Soup with Rice Dumpling for dessert, accompanied by fine Chinese tea or coffee, and additional Champagne, house wine, or Prosecco by the glass to toast to the promise of the Lunar New Year at Holt’s Café.
