In celebration of the legendary Dragon Boat Festival on 7 June 2019, Executive Chinese Chef Cheung Long-Yin of the hotel’s Michelin-starred Cantonese restaurant, Shang Palace, has created a new selection of sticky rice dumplings, which will be available for sale along with some popular choices at Kowloon Shangri-La, Hong Kong from now until 6 June 2019.Chef Cheung gives this year’s festival a creative twist with an array of brand-new flavours, including the Spanish Pork Belly and Chestnut Dumpling, Matsutake, Wild Mushrooms and Five Beans Dumpling, and 30-year Tangerine Peel and Sweetened Red Bean Paste Dumpling.

Spanish Pork Belly and Chestnut Dumpling (HK$ 208 each)
Chef Cheung gives a modern take on traditional dumpling highlighting the pork belly from chestnut-fed pigs in Spain to pamper gourmet taste buds. He also added chestnuts to enrich the taste of this special creation, turning it into a goodie to be enjoyed at home.

Matsutake, Wild Mushrooms and Five Beans Dumpling (HK$ 188 each)
To suit the taste of the healthy eaters, Chef Cheung creates this new addition with a mix of five different legumes, including red kidney beans, yellow split peas, soybean, mung bean and black-eyed peas. This brand-new creation is packed with protein, fibre and nutrients. The prized matsutake mushroom from Japan exudes a rich, earthy aroma, perfectly complementing the flavours of the five beans in the dumpling.

30-year Tangerine Peel and Sweetened Red Bean Paste Dumpling (HK$ 98 each)
Aged tangerine peel has been a popular ingredient in Chinese cuisine over the years and especially in Chef Cheung’s recipes. Chef Cheung adds this new addition to the traditional line-up; it is a perfect option for those with a sweet tooth. He chooses red-bean paste in place of lotus-seed paste to redefine the classic sweet sticky rice dumpling.The 30-year tangerine peel is also used to stimulate the appetite with its sharp, citrus flavours.

26-Head Yoshihama Abalone and Yunnan Ham Dumpling (HK$1,728 each)
This is undoubtedly the most premium option of all. Guests will be delighted with the delicate taste of the first-grade Japanese abalone enhanced by the intense and smoky flavour of pungent Yunnan ham. This luxurious sticky rice dumpling is definitely the perfect gift or festive treat for discerning gourmets.

Black Truffle “Buddha Jumps over the Wall” Dumpling (HK$318 each)
A creation inspired by the traditional Chinese soup – Buddha Jumps over the Wall. Featuring some of the best and most nourishing ingredients, such as sea cucumber, fish maw, conpoy and Yunnan ham, the dumpling’s taste is further enriched by the earthy flavour of the Italian black truffle.

Crystal Dumplings (HK$130 per box of three pieces)
The crystal dumplings are photogenic with their translucent dumpling skin appearance and feature a smooth and chewy texture. These dumplings are available in three sweet fillings – Pomelo and Mango, Tokachi Red Bean and Matcha, and Kagoshima Purple Sweet Potato.

Traditional flavours made using age-old recipes are also available. Selections include Succulent Sticky Rice Dumpling with Abalone, Dried Scallop, Roasted Pork and Salted Egg Yolk (HK$288 each), Sticky Rice Dumpling with Dried Scallop, Pork and Salted Egg Yolk Dumpling (HK$218 each) and Sweet Sticky Rice Dumpling with Mashed Lotus Seed Paste (HK$72 each).
