Shangri-La Hotel, Surabaya introduces Nicola Affatati as the new Italian chef who will be assigned at the newly rebranded Italian restaurant, Sapore Osteria.

Chef Nicola, who was born and raised in Mola di Bari of southern Italy, is expected to bring the authentic taste of Italian into his cooking creations. Prior to joining Shangri-La Hotel, Surabaya, he worked as sous chef at iO Italian Osteria in Singapore for four years since 2015.

Chef Nicola started his career as a chef in 1994 with experiences across various Italian restaurants and hotels in Venezia, Italy. His interest in the field began when he was a kid and was greatly influenced by his father, who was a former cook at Italian training ship Amerigo Vespucci when he was young.

Chef Nicola is very passionate about cooking. To him, the culinary art is able to transform food into emotions that can touch the five senses and influence someone’s mood.

In carrying out his new duty as the Italian chef at Shangri-La Hotel, Surabaya, he will bring his cooking style that is based on simplicity and home-cooking.

‘I will bring my family recipes that have been passed down from generation to generation in Italy’, he said when asked about his cooking style at Sapore Osteria. ‘The dishes served at Sapore are simple and rich in Italian flavours.’

Regarding some ingredients that are hard to find in Indonesia, he ensures it would not affect the authenticity of the Italian flavours the guests will savour.
