Presented at the NSW Sommelier’s Wine List Awards this month, the accolade recognised William’s commitment to showcasing NSW wines and his support and knowledge of the local wine industry.

A member of ICC Sydney’s pre-opening team, William has been instrumental in curating the venue’s 92% NSW wine list. His industry connections and knowledge of local wines has played a key role in the venue’s contribution to local food and beverage suppliers, which in 2018/19 resulted in A$12.2 million in direct expenditure for NSW food and beverage suppliers.

Highly respected in the industry, William was one of the first individuals in Australia to be certified by the Court of Master Sommeliers and he is renowned by the venue’s clients for his ability to deliver the perfect food and wine pairing.

CEO of ICC Sydney, Geoff Donaghy said William’s passion for NSW wines has supported the venue’s focus on delivering a positive impact for the state’s regional communities.

“The support that William shows for local winemakers is placing NSW wines on our global stage, giving local brands the opportunity to be served to guests from across the world.

“The collaborative approach and strong relationships that William has built with local wine producers has seen our NSW-focused wine list grow from strength to strength and we are on track for our commitment of a 100% NSW wine list in 2020.”

Beverage Operations and Cellar Manager, William Wilson said the quality of the wines produced in NSW was on par with the best in the country and around the world.

“At the very heart of the NSW wine industry are some incredible local producers making outstanding quality drops. We are currently conducting blind-tastings for our new collection and I continue to be blown away by the calibre of our local wines.

“It’s an honour to receive this recognition by the NSW Wine Association, I can only encourage more venues to follow in our footsteps of showcasing our state’s superb labels.”
