Tokoriki Island Resort, Fiji’s most awarded adults-only boutique island resort, is proud to serve up part two of its iconic eleven-part video series.

This week’s instalment is narrated by the resort’s Executive Chef, Ashim Singh, who started his career at Tokoriki Island Resort when he was 21-years old.

Two decades later, after working for an impressive range of establishments throughout Asia, the Pacific Isles and New Zealand, the globe-trotting, Nadi-born chef returned to the multi-award winning luxury resort’s kitchen. Influences from his Asian experiences meet his Pacific heritage in a delectable and ever-changing menu that elevates Fijian staples like ika vaka lolo and palusami to fine dining status.
