Waldorf Astoria Beijing has unveiled a spring-time afternoon tea menu that is a unique celebration of the epicurean delights of the hotel and the acclaimed French champagne house Perrier-Jouët.

The exquisite champagne-themed afternoon tea set features Perrier-Jouët Blason Rosé, a gourmet, gold-medal-winning champagne whose tasting notes call it balanced yet graceful, and which includes notes of crème de cassis, raspberry, roses, lime, and Morello cherries. Inspired by the graceful Perrier-Jouët and as a tribute to cherry blossom season, Waldorf Astoria Beijing has created a brand-new afternoon tea set that will be sure to satisfy the most discerning clientele with superb selection of in-season, choosiest, and organic ingredients.

With a distinctive rosé theme among the offerings, the set includes a rosé champagne sponge cake combines dried rose petals with champagne in tasteful harmony. The almond cake, with a hint of champagne, is paired with a gorgeously delicate white chocolate base. The pastry chef has also created a spring green tea tiramisu pot resembling a plant, with branches made of dark chocolate shooting up and exquisite flowers made of flour. Also, strawberry watermelon cake delights with its rich and multi-layered flavor. Strawberries on top are decorated with dried crushed rose petals.

Pink is also prominent in the rosé-themed afternoon tea set. In preparing the pink “strawberry” foie gras terrine with brandy, the chef painstakingly removes the tendons of the goose liver and submerges them in milk and brandy. After being cooked slowly they are blended into a mousse, shaped like strawberries. The dish has a lingering brandy bouquet and delights the tastebuds with the rich flavor of the foie gras, and the sweetness of the chocolate coating.

No afternoon tea could be complete without scones, and two varieties will be available, plain and rose. The rose cream, which gives off a delectable floral aroma, is made in the kitchen with rose petals and pure honey.

Other pastries and savories available include seasonal pink/red strawberry cheese cake, pink popcorn truffle chocolate, pink velvet cake, and mixed melon ball with homemade rose macaroon, Boston lobster in daikon warp, Emmental cheese with coppa ham, and salmon timbale with guacamole and crab roe.

For drinks, sakura latte and sakura lychee soda, an alcohol-free cocktail made from self-made sakura syrup and lychee juice, are available. Fine roasted coffees and signature premium teas are also available.
