The abalones and avocado are deep-fried for a crispy skin and then sautéed with the homemade salted egg yolk sauce, presenting a rich sensation. The popular Steamed Whole Abalone in Sauna Style with Jasmine Tea (HK$ 160 each) delights your palate with the sweetness of abalone. The aroma of jasmine tea is elevated as the tea is poured onto the abalone with the “sauna” effect. Warwick ‘Professor Black’ Sauvignon Blanc, Stellenbosch, 2016 (HK$ 550 per bottle, HK$ 120 per glass) is a perfect complement to both dishes.
