After 6 months of transformation the new Rotonde Brasserie has been totally revived!

This is the second fruitful partnership between the Negresco and the MHNA studios. After the Rivoli wing, they took on their second architectural challenge with the Rotonde Brasserie!

The MHNA studios kept the Carrousel design idea imagined by Madame Augier in 1984 as they introduced a modern touch! Madame Augier’s concept for the Negresco; to blend both classical and modern art, presenting France through works of art from Louis XIII to our day, has been well and truly preserved!

The white horses still admirably line the Brasserie’s walls covered in gold leaf. As you raise your eyes, you will behold an Italian sky (by means of a video) which goes from clear blue to a starry night in twelve hours.

The Negresco, EPV (Living Heritage Company) and Ecolabel certified, once again called upon suppliers who are proud to have this certification and 95% of the companies were local.

With noble materials, gold leaf, and a space designed for the beauty of the eye but also to make the customer’s and staff’s lives more comfortable … all of the ingredients were put together to give the Rotonde Brasserie a second life.

It is also a promising setting for a new challenge for Virginie Basselot the new Michelin-starred Chef Meilleur Ouvrier de France – Best Craftsman of France – in 2015. To this date only two women chefs have been honoured with this title. With the ‘Cuisine Nissarde’ label the chef creates her menu with dishes from Nice using local products from the Mediterranean to the hinterland of Nice, as she pays tribute to other French regions thanks to her weekly menus.

The Rotonde is for sharing and partaking, where the Chef spotlights reassuring and effective dishes. She perpetuates the initial Brasserie à la française spirit inspired by Madame Augier.
